This semi carbonic macerationa technique traditionally employed in Beaujolaisgives loads of lively, juicy fruit, notes of sweet spice, and dangerously supple tannins. The wine was then aged in foudres and bottled without filtration. Watch out: this Pinot goes down almost too easily.
