Each parcel is vinified separately and gently pressed using a Bucher press. Fermentation takes place in glass lined stainless steel and ceramic tanks, with some older vine parcels undergoing barrel fermentation and indigenous yeast fermentation. These parcels are aged in 205 litre, four year old
