A special yeast is added to the agave juices prior to fermentation, before Rooster Rojo anejo is double pot distilled in stainless steel pot stills and aged in oak for a minimum of one year in used bourbon barrels and has a more pronounced richness and exceptional smoothness. Vanilla, coffee, a hint of tobacco and
